GOOEY Sugar Cookies- The Trick!

Happy Monday little babiiees!

Someone's foodie photog skills are getting legit. :) 

I am definitely a cookie person and, much like my beginning stages with cupcakes, 
I used to suck at making cookies. 
I used every ingredient.
I followed every direction.
And they still tasted like chocolate chip rocks. 
Until.
Until I found the most perfect recipe with, well, a little trick.

The Recipe?

2 3/4 C All-Purpose Flour
1 Tsp Baking Soda
1/2 Tsp Salt
1 1/4 C Margarine
2 C White Sugar
2 Eggs
2 Tsp Vanilla Extract
Pink Sprinkles for decoration.. Duh. 

1. Preheat over to 350 degrees and in a medium bowl
combine flour, baking soda, and salt, and set aside. 
2. Combine remaining ingredients and beat one egg in at a time.
3. Gradually combine dry ingredients into other bowl. 
4. Roll dough into walnut sized balls and place on greased cookie
pan approximately 2" apart. 
5. Then pop 'em in the oven for 9 minutes.
Yes, nine. 
6. Allow to cool on a wire rack. 

The Trick? 
Sliced bread.
Seriously!
Once the cookies have cooled on the wire rack, 
store them in a cookie jar with a slice of bread.
BOOM!
Works. Every. Time. 

The Reasoning?

Shoot people, I don't know.
This is Corin Bakes not Bill Nye the Science Guy.
All I know is before the bread, cookies? Hard as a freakin' rock.
After the bread? Deeeelish and super gooey!
I would imagine it has something to do
with absorbing moisture (I seriously hate that word)
and some other nonsense but who cares!

Anyway, just had to share that little trick with y'all.
Now I'll be resuming typical Monday night activities.
Which may or may not include these ladies...

New Job & Desk Inspiration

Bad blogger.. party of one! 

I, needless to say, have been slacking again
I just wrapped up my first week at my new job and time has been a luxury.
First weeks of everything usually draaaaggg on. Work, class, you name it.. 
I always hated the first week of classes. That could be attributed to
the fact that my name was almost always said incorrectly. 
CORE-IN ? No, Corin... 
As in Corin-thians in the Bible. 
As in Corin from the movie Big Daddy who, yes, worked at Hooters.
Anyway, the first week is usually the week that you want to just be over.
Piles of paper work. 
Being introduced to everyone.
Then forgetting their names.
Having all of your new co-workers judge every. little. thing. about you. 
Trying 3 new routes to your new office. 
All of which just so happen to force you to drive through school zones. Help.
And then theeee worst.
WHERE IS THE CLOSEST STARBUCKS?
Yes, that happened.
Fortunately, there is one just a mile away with-
wait for it-
a drive-thru. Thank the heavens. 
But this week was a little different!
I literally just dove right into my new job and MAN does it feel good.
to be back in the field selling! 

Naturally a new job brings a new little workspace! 
I haven't been able to do much yet but I am looooving these ideas:




Picked these up for $15! 

I'll keep y'all updated on the work space
progress but again, time is a luxury, people!

No Mas Margaritas

It is now Siete de Mayo which means I am dos days late
on my Cinco recap. TRISTEEEE!
That is "sorry" in Spanish and no, I did not know that off the top of my head.
The translator app for iPhone works wonders.

I for one am ecstatic that Cinco de Mayo and any other
Mexican-related festivities are over. 
I don't think I can consume any of the following for at least another 3 months:

Tacos
Burritos
Enchiladas
Anything With Sour Cream
Queso
Anything Lime Flavored
Margaritas
Coronas

Needless to say I'm well overdue for a little
detox sesh buttttt here's a few snapshots from this past weekend:

Therefore, boat days will be limited to Saturdays & Sundays.

Annnndd maybe a few after work boating-sessions...

Arriba Arriba Arriba! A Mexican Fiesta!

I don't know why I'm so obsessed with screaming "Arriba?"
Both times we went to Mexico, the second I stepped off our cruise ship
I threw on a sombrero and insisted on speaking in Spanglish the whole time.
I've checked with both of my parents on the possibility of having
Mexican ancestors aaanddd that's a big negative. 
Cinco de Mayo is definitely in my top 5 fave holidays.
I could live off tacos.
I crave margaritas.
I'm in love with the whole bright color scheme- the yellows, reds, pinks, oranges!
I guess I just have a little special spot in my heart for that nationality?
I ultimately  blame Spring Break 2009 but that's neither here nor there.

This week I invited a few girlfriends over for Taco Tuesday and skinny margs.
Translation?
I want an excuse to throw a party.

Jake of course was feeling left out so
I snapped a pic of him with Aunt Shan.

Looking back I'm not sure what the big deal was with the "skinny" margaritas.
The multiples spoonfuls of sour cream may or may not have cancelled out
and form of "skinny" that was taking place that night. 

So that's the la fiesta el wrap up-o! 
I hope everyone's Cinco de Mayo is filled with rays of sunshine,
and margaritas, and loaded coronas annddddd I will see you all bright 'an early

Dos de Mayo Treat: Margarita Cupcakes

It's May! It's May!
I clearly missed out on celebrating the first day of May yesterday
so I'll go ahead and take this opportunity to show the SECOND day in May a little attention.
Yes? Yes. 

Cinco de Mayo is right around the corner.
Yes, another Sunday holiday. Which means May 6th will be an interesting morning
for all of the other working professionals out there. 
Cinco de Mayo needs to be a paid holiday.
So does St. Patrick's Day.
So does the day after Super Bowl.
Catching my drift here? 
Anyway I figured I would put use to some of those
festive Cinco de Mayo ideas and have some of the gals over for a pre-cinco
skinny margs/tacos fiesstaaaaaa!
It was also a good excuse to snap a ton of picture of more randomness.

I promise a full recap but for now I wanted to share this recipe
that I had been dying to make- margarita cupcakes!


Here's what you will need:
 For the Cupcakes:
1 box Betty Crocker Lemon Cake Mix
1/2 c Water
1/2 c Vegetable Oil
1/2 c Tequila
1 tsp Grated Orange Peel
3 Eggs
1 box Lime Flavored Gelatin
For the Frosting:
2 3/4 c Powdered Sugar
1 tbsp Lime Juice
2 tbsp Tequila
Pinch of Salt

1. Heat over to 350 and place baking cups in a 24
regular sized muffin tin.
2. In a large bowl, beat all of the cupcake ingredients on low
for 2 minutes and divide evenly into 24 cupcakes.
3. Bake 18 to 22 minutes and allow cupcakes to cool completely.
4. Combine ingredients for frosting and beat for 30 seconds.
5. Top cooled cupcakes with frosting and add lime wedge and straw for garnish.

Wam. Bam. Thank you, ma'am.
Easy Peasy.

They're definitely a fun little Cinco de Mayo treat and SO delish.
They can also be made without the tequila.
Which would have been an alternative option had my girlfriend Jen
told me that she was prego before this little fiesta!
